Vegan Vanilla Cake

This is such a simple vegan cake to make - and tasty too - not healthy by any stretch of the imagination, but it's vegan, and great for birthdays and treats!
3 ½ Cups Self Raising Flour
2 ½ Cups Sugar
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
2 ⅔ Cup Plant Milk
⅔ Cup Ground Nut Oil
2 tbsp Apple Cider Vinegar
1 tbsp Vanilla Extract
Ensure the oven is at 175°c, line and grease either 2 round 9" cake pans, or 2 loaf tins.
“If you are making a birthday cake we have had a lot of success making 'butter' icing with plant based spreads mixed with icing sugar, or you can leave plain and enjoy with a cup of tea!”
Whisk together all the wet ingredients for a few minutes and set aside for 5 mins to allow to curdle a little.
Mix all the dry ingredients together in a large mixing bowl!
Pour the wet ingredients into the dry ingredients and mix together until you have a smooth batter.
Distribute between the two greased tins and bake for approximately 40 mins, or until a knife comes out of the cake clean.
