Sweet Potato, Cauliflower, Broccoli and Lentil Curry

One of the best ways to get lots of veggies into your children!



INGREDIENTS:

2 tbsp coconut oil

1 medium red onion

1 tsp cumin seed

1 tsp mustard seeds

1 tbsp medium curry powder

3 cloves garlic

Half small cauliflower

(roughly chopped)

1 Head of Broccoli

(roughly chopped)

2 medium sweet potatoes

(cut into chunks)

Big bunch coriander

(roughly chopped)

1 x 400g can green lentils

1 x 400g can of chopped tomato

1 x 400g can chickpeas

This curry was an instant hit with my family, and is requested often! It's so easy to cook too, and can be adapted very quickly if you want to add other vegetables...

METHOD:

Sauté the onions in coconut oil then add the spices - cook for a few minutes, then add the sweet potato, cauliflower, Broccoli and tomatoes.

Bring to the boil then simmer until the sweet potatoes, broccoli and cauliflower are cooked, add the lentils, chick peas and coconut milk and coriander, and heat through.

Season and serve with wholegrain rice or quinoa.
