Sweet Potato, Carrot and Lentil Soup

Soup-er fast to make ~ and soup-er delicious too!!


Oil to sauté onions

3 large Sweet Potatoes

6 medium Carrots

2 cups Lentils

1 400g can coconut milk

1.5 ltrs veggie stock

Chilli powder to taste

“Perfect for winter evenings!”


Sauté the onions, add the chopped sweet potatoes and carrots and saute a few more minutes, then add the lentils, coconut milk, stock and chilli powder to the strength you prefer - or leave it out if you don't like chilli.

Simmer until the potato and carrots are soft and the lentils are fully cooked - you may need to add more stock if the soup is getting too thick.

Remove from heat and puree with a hand blender stick.

TOP TIP: Enjoy with a delicious crusty bread!
