Red Cabbage and Kale Coleslaw
This is a favourite in our PlantPure house!

INGREDIENTS:
Red Cabbage
Kale
Pomegranate
Vegan Satay Sauce: Blend ingredients together
1/2 cup peanut butter
2 tbsp Tomato paste
3 large pitted dates (soaked in water fot 10 mins)
2 garlic cloves
1 tbsp peeled chopped ginger
1 cup fresh coriander
2 tbsp lime juice
2 tbsp Rice Vinegar
1 tbsp Tamari
1/4 tbsp salt

Method: Chop the kale and red cabbage - quantities and ratios to your preference, stir in the Vegan Satay Sauce and sprinkle with Pomegranate seeds - delicious!
