Plant Pure Dahl

Such a yummy way to eat lentils!




INGREDIENTS:

2 cups red lentils (approx 400g)

1 can coconut milk

1 can chopped tomatoes or 4 chopped fresh tomatoes

1 med red onion, finely chopped

3 cloves garlic, crushed

2 tsp ground cumin

2 tsp ground turmeric

1 tsp ground ginger or 1 tbsp grated fresh ginger

Salt & Pepper

2 cups veggie stock (approx 500 ml)

“add some chillies if you want to spice it up a bit”

METHOD:

Sauté the red onions, add the garlic, ginger and spices for a further few minutes then stir in the red lentils, get them coated in the onions and spices, then add the tomatoes, coconut milk and veggie stock. Simmer until the lentils are cooked and the Dahl is your preferred consistency - add more water if you want it more runny.

Enjoy with brown rice or quinoa
