Bulgur Wheat, Carrot, Orange and Walnut Salad

This was a completely unexpected discovery that just happened when I needed a salad and had limited ingredients in the fridge!



INGREDIENTS:

Bulgur wheat

2 carrots grated

1 large orange, diced up

Zest of the orange and lime

1/2 cup chopped walnuts


Dressing:

Juice of 1 lime

1 1/2 tbsp toasted sesame oil

1 tbsp maple syrup

1 tbsp rice wine vinegar

1 tbsp soy sauce

1 tbsp freshly grated ginger

1 garlic clove crushed

1/2 tsp sea salt


METHOD: Mix all the ingredients together in a bowl and toss in the dressing.
